Jito now allows users to request their transactions not be sandwiched in a bundle. But they can still be sorta sandwiched, doing what's called a "blind" or "wide" sandwich, where the sandwicher basically YOLOs the backrun within 50-300ms after the frontrun. They take more risk that something happens in the middle to change the price, but on average they're still profitable.
The game has evolved. These "wide" sandwiches are now 30% of all sandwiches and climbing.
Lesson: game theory is a cruel mistress. Really hard to defeat these games.
