There are so few projects that are truly immutable.
@aave has a lot of levers, but at least they have a dao/council. But anyone can open a loan and lend.
@Uniswap is immutable but without their frontend, few can use it.
I like that addliquidity() is free of front end fees.
@CurveFinance is pretty close, to permissionless but you still need to ask for a gauge, but at least you ask a dao. Anyone can swap here too.
@LiquityProtocol is a great example, but it doesn't have adaptation, which is a pro and con. But anyone can open a loan and farm their share of the product fees.
The list can go on but I will stop there with a few examples of the 3 major primitives
